Epic Carrot Cake with Cream Cheese Frosting

It has to be said that birthday cakes get a lot easier as the kids get older. It's no longer about Peppa Pig or footballs or trains but instead more about a great tasting cake. Last year Sam asked for a chocolate cake and a chocolate cake he got. This year there was no request but he has mentioned carrot cake on more than one occasion, saying that it's the best cake that I've made. To be honest Sam is so laid back and would eat almost anything so I'm sure he would be happy with any cake. I love carrot cake though so carrot cake it was to be....

Carrot Cake with Cream Cheese Frosting

I don't usually add nuts as the kids say that they don't like them, however I think their tastes are changing as they loved the pecans in my breadsticks so I risked adding a few walnuts to this cake, and not one was left on the side of the plate.

Carrot Cake
350g carrot, grated
250ml sunflower oil
4 eggs
250g caster sugar
200g sultanas
50g walnuts
250g self raising flour
1 tsp bicarbonate of soda
2 tsp cinnamon
1/2 tsp salt

Cream Cheese Frosting
75g Butter
200g Icing sugar
300g Cream cheese
2 tsp cinnamon

To decorate
handful of walnuts


  • In a large bowl mix together the grated carrot, oil, eggs, sugar, sultanas & walnuts
  • In a separate bowl mix together the flour, bicarbonate of soda, cinnamon & salt
  • Add the dry ingredients to the wet & mix well
  • Divide between three 8" greased & lined sandwich tins 
  • Bake in a preheated 180C oven for approx 20 minutes
  • Leave to cool in the tins for 10 minutes before turning out onto a wire rack & leaving to cool completely
  • Make the frosting by beating all the ingredients together until light and fluffy - it may go runny at first but keep beating & beating & beating & it will thicken up (for best results use a food mixer!)
  • Divide the frosting between the 3 layers and sandwich together
  • Decorate with additional walnuts
