Cheese, Tomato & Spring Onion Quiche - with a bread crust

Well, 2020 is turning out to be a pretty bizarre year isn't it - how are we already in August, but at the same time it feels like the year is dragging. So much has happened, but also so little. Never again will we complain about the length of the 6 week summer holiday when many of us have survived the kids being off school for the equivalent of 4 summer holidays back to back, without even a an actual summer holiday to break it up. At least the weather has been pretty good, mostly, other than the torrential rain, multiple storms and floods that have happened recently. On the good days many of us are grateful that we can now venture further than our back gardens, and can once again enjoy parks, beaches and countryside.

Picnic time
Picnics are a great option for lunches at this time of the year, whether it's to enjoy in your garden, on a beach, park bench or even your living room floor if the weather is bad. Whilst sandwiches are a safe bet they can sometimes be a little boring. Pies, pasties, sausage rolls and quiche are great go to picnic essentials, but if you want to go for an impromptu picnic and you don't have the time or inclination to to make pastry, or you don't have any ready made in your fridge, then this quiche recipe can be the perfect solution, as it uses sliced bread for the crust.

Crispy crust
Yes, believe it or not, that crispy crust is made using sliced bread! Vogel's No Bits Seeded White loaf is ideal for those who want their children to have the benefits of milled grains and seeds in a seeded loaf but have children that won't entertain anything other than white bread. Not only does this sliced bread have all the nutrition and taste of seeded bread, but it has the soft texture of a white loaf, which children love.

Healthier option
Not only is this crust convenient, but it is also a much healthier option than using pastry, which has a high fat content (around 30% fat in your average shortcut pastry versus less than 3% fat in Vogel's No Bits Seeded White), and lower fibre content (around 1% fibre in shortcrust pastry versus 4% in Vogel's No Bits Seeded White). Some of the egg mixture soaks into the bread, but this is minimised by brushing the bread with a layer of egg mixture before 'blind baking' for around 10 minutes.

Get the kids involved
Making this quiche is a great activity to do with children of all ages. It's a simple enough recipe for older children to prepare on their own, as there are no tricky skills required, and younger children can help with grating cheese, cracking and beating eggs, and buttering bread, depending on their age and ability. They can also choose fillings for themselves - try adding a choice of fillings to small bowls and let children choose what they like, for example chopped ham, sweetcorn, cooked broccoli, cooked bacon, mushrooms and cooked leeks.

How good does that quiche look! Great for lunches, picnics or dinner, and when the kids are back at school you could pop a wedge into their lunchbox, or try making individual quiches in a muffin pan using a slice of bread for each quiche. Here's how to make a deep filled quiche, approximately 15cm x 20cm in size.

6 slices of Vogel's No Bits Seeded White bread
40g butter, softened
6 large eggs, beaten
2 spring onions, thinly sliced
half a pepper (I used 1/4 of an orange pepper & 1/4 of a yellow one), thinly sliced
75g mature cheddar cheese, grated
50ml milk
Salt & black pepper
4 or 5 baby plum tomatoes, halved
  • Preheat the oven to 170°c
  • Cut the curved top crusts off 4 slices of bread and cut the other 2 slices in half - you will need the halves with the straight crustUse a rolling pin to flatten the bread out a little
  • Spread the softened butter onto the bread 
  • Arrange the slices of bread, buttered side down, in the 15x20cm rectangular dish with 2 slices on each side, and the half slices on the ends, overlapping slightly. Use offcuts of bread to patch up any gaps or holes in the bread.
  • Beat the eggs and brush a layer onto the bread
  • Bake for approx 10 minutes until the bread is starting to crisp up
  • Lay half of the sliced spring onions, half of the sliced peppers and half of the cheese onto the bread crust
  • Beat the milk into the eggs & season with salt & pepper
  • Pour the egg mixture into the crust, and top with the remaining onions, peppers, cheese & tomato halves
  • Bake for approx 30 minutes, until the filling is just firm to the touch
  • Enjoy warm or cold

Not only does Vogel's No Bits Seeded White make great quiche, but it makes pretty awesome toast too! Available to buy from Waitrose.

The Crazy Kitchen Baking Mixes

The Crazy Kitchen Baking Mixes came about during Covid-19 when it became increasingly difficult to shop for baking ingredients, particularly flour. I initially provided baking boxes at cost for my local community, which included flour, butter, sugar and eggs. Over the space of 2 days I packed and delivered around 60 boxes to residents of our village. Shortly afterwards I decided to source baking mixes that I could package in single batch quantities, with full instructions and only the need for water. These mixes are perfectly convenient, time saving and a great way to introduce younger children to baking or give older children the independence to bake alone.

There are currently 10 different baking mixes available : Chocolate brownie, chocolate cookie, plain cookie, chocolate muffins, plain muffins, flapjack, wholemeal bread, white bread, pizza base and chocolate mug cakes.

Additional ingredients can be added to the mix if you want to pimp them up a little - for example you could add chocolate chips or nuts to the brownies, berries to the muffins, and flavours to the bread - or you could even make cinnamon buns or chocolate swirls!

Fresh Apricot Muffins

It's been a busy old week this week, starting off with a [successful] trip to watch football at Wembley and a catch up with old friends and family, and ending with a day of housework and baking today, with a job interview, spot of work and juggling family life and half term in between. Thank goodness that the weather has been mostly good and the kids have been spending a lot of time outdoors playing football.

Last night I had a bit of a fright when I was closing the kitchen door for the evening, around 11.30, and almost squashed a frog in the doorway. I'm a bit of a wuss when it comes to handling creatures so went to call for assistance. The eldest was still at work, middle child was at a friends, husband was away and youngest and his friend were fast asleep, but thankfully the eldest's girlfriend was still awake, but by the time we came downstairs the frog had hopped inside! Many comedy movements later and we'd managed to get the frog back out of the door with the assistance of a couple of flip flops. Hopefully it managed to make its way back to the pond sometime in the night, but I'll be keeping the doors closed tonight just incase.

Fresh Apricot Muffins

A few weeks ago I started to have a weekly fruit box delivery from local business, B Taylor Fruit & Vegetables, and we've been enjoying loads of lovely fruits, including many that I wouldn't usually buy. This week we've received donut peaches, kiwis, apricots and strawberries along with the regular bananas, apples, grapes and oranges. It's a great way to enjoy seasonal fruits and the kids are loving the selection. I decided to use a few of the apricots to make some muffins for a friend who had a bit of an accident over the bank holiday, in the hope of bringing a little cheer to her. The recipe is nice and simple and a great one to make with the kids as it just requires a little mixing. The baked muffins are delicious straight from the oven with vanilla ice cream or custard, or left to cool they can be drizzled with a little icing.

One made, the kids will then keep pestering you for a slice of flapjack whilst waiting for them to cool - take this opportunity to get them to help with a few chores around the house!

Chocolate & Banana Pinwheel Pastries

School holidays are a time when the kids eat us out of house and home. They seem to be always hungry and as they all get up a different times here, the kitchen is being used constantly to prepare food. Despite having plenty of food in the fridge and cupboards they're always complaining that there's no food, yet what they really mean is that there's no 'instant food', apart from toast, cereal & fruit, which they live off mostly when they have to fend for themselves.

These pinwheels can almost be classed as 'instant food' as they take very little time to prepare. They're also pretty simple to make so the kids can make them by themselves, and as the recipe makes so many of them there may even be enough to last a couple of days!

Enjoy a couple of these for breakfast with your morning cuppa, have a couple more with your picnic lunch, and then finish off the day with a couple of warm ones with a large scoop of vanilla ice cream.

Chocolate Ice Cream Cookie Sandwiches

The summer holidays are coming to a close, with just two weeks left here before the new term starts. A couple of weeks ago I shared a simple recipe for Sweet & Salty Marshmallow Squares, which is one of many recipes on this blog that's fun and easy to do with the kids. Cooking is a great way to keep the kids entertained for a few hours, especially during the school holidays when parents may run out of ways to keep the kids occupied.

Iceland have challenged me to take a look around one of their stores and choose some ingredients that can be put together to make a delicious dish, that's easy to prepare with the kids. If your kids are older they might even like to make this one on their own, leaving you to get on with some jobs (or put your feet up and wait for the finished dish!)

The bank holiday is coming up and these will make a delicious alternative to a regular ice cream, especially if it's a hot weekend!

I was delighted to find Millies Cookie dough amongst the frozen desserts in Iceland, and even more delighted to see that they can be popped into the oven without having to get my hands or any utensils dirty. It couldn't be easier to enjoy freshly baked cookies.

Another hack for making these ice cream sandwiches is in the preparation of the ice cream. A 500ml round tub of ice cream is the perfect diameter to fit into these cookies once they're baked, and can be sliced whilst still in the tub, which saves lots of mess, but it was a VERY hot day when I made these and, as you can see, they melted VERY quickly.

Chocolate Ice Cream Cookie Sandwiches - makes 3

box of Millies Triple Choc cookie dough
500ml tub of Ice cream (I used Oreo)
sprinkles
  • bake the cookies as per the directions on the box
  • as soon as you take the cookies out of the oven flatten them with a fork
  • leave to cool on the baking sheet for 10 minutes before removing to a wire rack to cool completely
  • using a sharp knife cut three 1-2cm slices of ice cream in the cardboard container 
  • remove the cardboard from around the edge of the ice cream and sandwich between two cookies
  • roll in sprinkles or sugar strands
  • eat immediately or return to the freezer until ready to eat

Jumbo Chocolate Orange Cookies

The end of the school year has arrived, and I can't believe that my baby boy has completed 2 years of school already. It suddenly dawned upon me yesterday that we hadn't got anything for his teacher, and even though he'll have the same teacher next year it's nice to give a little thank you gift, so we decided to bake cookies.

This is my favourite cookie recipe, and I just add different flavours to suit. Yesterday I made lemon and sultana to take to bootcamp as it was my birthday, and we decided that chocolate orange would be a nice flavour for the teacher. They can also be made in whatever size you choose - I used the same recipe previously to make mini spiced lemon cookies, but this time we wanted to make jumbo cookies, and packed six in a box to take into school.



Jumbo Chocolate Orange Cookies - makes approx 9

115g Butter, softened
230g Caster sugar
35g Golden syrup
1 Egg
zest of 2 oranges
230g Self Raising Flour
1 tsp Bicarbonate of Soda
100g dark chocolate chips
  • Beat the butter and sugar together
  • Beat in the golden syrup, egg & orange zest
  • Add the flour and bicarbonate of soda and stir until well combined
  • Stir in the chocolate chips
  • Roll mixture into large balls (approx size of a satsuma) and place on a greased baking sheet, spaced well apart (you may need to do this in a few batches)
  • Bake in a preheated 170 C oven for approx 12-14 minutes, until golden brown
  • Cool for 10 minutes on the baking sheet before transferring to a wire rack
  • Store in an airtight container

Chocolate Dinosaur Nests

Jack loves cooking but we don't get chance to do as much as we used to before he was at school. One day last week I got all the ingredients ready for chocolate crispy cakes whilst he was at school, and then as soon as he was home we set about making some Dinosaur Nests. They were supposed to be Easter nests (a little late, I know), but Jack wanted to make dinosaur nests as he'd been learning about dinosaurs at school that day.

Chocolate Dinosaur Nests - makes 8

200g dark chocolate
50g butter
2 tbsp golden syrup
100g cornflakes
24 mini eggs
  • Melt the chocolate, butter & golden syrup together in a bowl in the microwave (on short bursts) or over a pan of boiling water
  • Stir in the cornflakes and mix until well coated
  • Spoon into muffin cases and make a well in the centre
  • Add 3 mini eggs to each nest & place in the fridge to firm up
