Jumbo Chocolate Orange Cookies

The end of the school year has arrived, and I can't believe that my baby boy has completed 2 years of school already. It suddenly dawned upon me yesterday that we hadn't got anything for his teacher, and even though he'll have the same teacher next year it's nice to give a little thank you gift, so we decided to bake cookies.

This is my favourite cookie recipe, and I just add different flavours to suit. Yesterday I made lemon and sultana to take to bootcamp as it was my birthday, and we decided that chocolate orange would be a nice flavour for the teacher. They can also be made in whatever size you choose - I used the same recipe previously to make mini spiced lemon cookies, but this time we wanted to make jumbo cookies, and packed six in a box to take into school.



Jumbo Chocolate Orange Cookies - makes approx 9

115g Butter, softened
230g Caster sugar
35g Golden syrup
1 Egg
zest of 2 oranges
230g Self Raising Flour
1 tsp Bicarbonate of Soda
100g dark chocolate chips
  • Beat the butter and sugar together
  • Beat in the golden syrup, egg & orange zest
  • Add the flour and bicarbonate of soda and stir until well combined
  • Stir in the chocolate chips
  • Roll mixture into large balls (approx size of a satsuma) and place on a greased baking sheet, spaced well apart (you may need to do this in a few batches)
  • Bake in a preheated 170 C oven for approx 12-14 minutes, until golden brown
  • Cool for 10 minutes on the baking sheet before transferring to a wire rack
  • Store in an airtight container

Sticky Chocolate Orange Buns

I haven't made bread in ages, but the return of some warm weather gave me a good excuse, as it means I don't have to try and find a space in the airing cupboard (which doesn't get that warm anyway) to place the dough to prove.

I wanted to make buns, and as I've made a few flavours previously (toffee apple,  strawberry & lemon curd, sticky plum, cherry, cinnamon, and Nutella) I wanted to try something new this time, and opted for chocolate orange as I knew the kids would love them.

When it comes to bread making you need a little patience, so don't try and rush the process. Make sure you allow yourself enough time for proving twice, so starting in the morning is a good idea. It comes down to a little trial and error at first, and getting used to the feel of the dough, and knowing whether you need to add a little more water/milk or a little more flour. Different flours absorb water differently so measurements of liquid are not always exact, and you may need to add more or less than a recipe states because of this - like I said, it's trial and error at first.

I use my food mixer to mix the dough, but it's not necessary and can all be done by hand - I'm just lazy when it comes to kneading, plus having carpal tunnel & arthritis in my right hand doesn't help!

  Sticky Chocolate Orange Buns

Sticky Chocolate Orange Buns - makes 12-15

for the dough
500g white bread flour
1/2 tsp salt
50g caster sugar
50g butter, melted
7g yeast
225ml milk (approx)

filling
25g butter, melted
zest of 2 oranges
150g good quality dark chocolate chips - I used Callebaut Belgian chocolate

chocolate orange glaze
50g butter, melted
juice of half an orange (2 tbsp)
1 tbsp cocoa powder
4 tbsp icing sugar

  • add the flour, salt, sugar, butter and yeast to the food mixer
  • with a dough hook attached and the motor running slowly, add almost all of the milk, adding more if it's looking a little dry
  • keep mixing until everything has been mixed together
  • speed the motor up a little until the dough is smooth and elastic
  • place dough in a lightly floured bowl and cover with clingfilm and leave in a warm spot until it's doubled in size (approx 2 hours)
  • turn the dough out onto a floured surface and roll out into a large rectangle
  • brush with melted butter and sprinkle with chocolate chips and grate the zest over it, evenly
  • roll the dough up tightly into a long sausage
  • using a sharp knife cut slices approx 1cm in width and place in a greased ovenproof dish or baking sheet - if you bake them closer together they will be softer and deeper, if you space them out they will spread out more, be firmer and larger - see pics of both options below
  • cover with clingfilm and leave in a warm spot again until approx double in size
  • Once proved for the second time, preheat the oven to 200C, remove the clingfilm and bake the buns for approx 15-20 minutes until lightly golden brown
  • leave to cool slightly before making the glaze by whisking all the ingredients together until smooth and then pouring over the buns

These are delicious when eaten slightly warm but are equally delicious if kept in the fridge and eaten cold, as the glaze firms up a little and the chocolate chips are hard

Chocolate Orange Frozen Yoghurt Pots

I've never tried Greek Gods yoghurts before so when I was asked if I would like to try some samples I was happy to give it a go. They come in 4 varieties, Honey, Honey & Strawberry, Honey & Vanilla and Honey & Clementine, all in whopping 680g tubs. We all like yoghurt straight out of the pot but I wanted to try something a little different with these too. They are very delicately flavoured and although we could taste the fruit flavours we couldn't pick up the honey.

I used the Honey & Strawberry in my Ice Cream Sandwiches and the strawberry flavour was subtle and not at all overpowering. They were such a success I decided to make another batch of the 'ice cream' using the Honey & Clementine flavour this time.

Chocolate Orange Frozen Yoghurt Pots - makes 8


175g Condensed Milk
120g Double Cream
200g Greek Gods Honey & Clementine
60g (approx) grated dark chocolate


  • Whisk the condensed milk, double cream & yoghurt together until thick
  • Spoon a teaspoon of grated chocolate into the cavities of a silicone muffin pan
  • Spoon a tablespoon of the creamy mixture on top, repeat
  • Smooth the tops over and freeze until set
  • Turn out onto a plate & serve with orange slices

These were lovely, the orange flavour complimented the dark chocolate perfectly.

Devilishly Chocolatey Chocolate Orange Pumpkin & Potato Cake

Well the aim was for the cake to have pumpkin in it and I bought an 'edible' pumpkin especially for the purpose. First of all I was surprised that the flesh was so pale when I cut it open and then once I'd roasted it in the oven and scooped it out it seemed very watery, more of the consistency of a marrow than a pumpkin. Instead I decided to use some butternut squash and potato mash that I had leftover after making gnocchi. You need the mash to be quite firm so don't add any milk or butter to it.

The topping (I can't really call it icing as it doesn't have any icing sugar in) is perhaps the easiest think I've ever made - it was one of those moments when you look in your cupboard and say 'ahh that'll work'...and thankfully it did.

Devilishly Chocolatey Chocolate Orange Pumpkin & Potato Cake

225g Potato/Butternut Squash/Pumpkin mash
150g Butter, softened
225g Soft Brown sugar
4 Eggs
225g Self Raising Flour
30g Cocoa powder
1 tsp Bicarbonate of Soda
Zest of 1 large orange and juice of half

Topping
200g Full Fat cream cheese
120g Chocolate spread
20g Cocoa Powder

  • Beat the mash, butter and sugar together - don't be concerned it it looks a little curdled at this point
  • Beat in the eggs one at a time, along with a tablespoon or two of flour with each egg
  • Sift in the remaining flour along with the cocoa powder and bicarbonate of soda
  • Stir in the orange zest and juice and mix until everything is fully combined
  • Pour into a greased and lined 24cm springform cake pan and bake in a preheated 180° C oven for approx 30 minutes
  • Leave for 10 minutes before turning out and cooling on a wire rack
  • Beat all of the topping ingredients together and spread over the cooled cake

I decorated this cake with chocolate tombstones made by melting Silver Spoon orange flavoured buttons and piping them onto a sheet of greaseproof paper. My writing leaves much room for improvement!
