1 tbsp Olive Oil
1 Onion, sliced
750g Potatoes
1 tsp Paprika
1 tsp Turmeric
200ml Vegetable stock
- Heat the oil in an ovenproof lidded pan
- Add the onion & fry gently for 5 minutes
- Dice the potatoes (approx 1-2cm) and add to the pan
- Stir in the paprika, turmeric & stock and mix well
- Place in a preheated 200 C oven with the lid on for 30 minutes, stirring halfway through
- Add salt & pepper to taste before serving as an accompaniment to your meal
