Honey & Ginger Cookies with White Chocolate Chunks

After the success of my Mini Egg cookies I wanted to try out some new flavours using the same recipe as a starting point. Noticing that the We Should Cocoa theme for April is Honey, and having not joined in before, I thought I would see how I could incorporate some honey into the cookies, as well as chocolate of some kind of course, as that's the idea of the challenge.

If you're not keen on ginger this could be left out, or less added, but we like ginger and these were quite gingery, as well as being very buttery and sweet - a perfect treet for a non fasting day!

Honey & Ginger Cookies with White Chocolate Chunks 
makes approx 20 cookies

110g Butter, softened
100g Caster sugar
30g Clear honey
1 large egg
150g SR Flour
1tbsp ground ginger (adjust according to taste)
100g white chocolate, chopped into small chunks


  • Beat together the butter, sugar & honey
  • Beat in the egg
  • Add the flour, ginger & white chocolate & mix until combined
  • Spoon balls of mixture onto a greased baking sheet, spaced well apart
  • Bake in a preheated 170C oven for 9-10 minutes
  • Leave to cool for 10 minutes before transferring to a wire rack to cool completely

  1. Ginger, honey and chocolate sound like a fabulous combination. In fact I know it is as I've tried it on a few occasions myself. I've not tried it with white chocolate before though, so something to have a go at. Your biscuits look lovely. Thanks for entering them into We Should Cocoa.

  2. Mmmmmm yummy! I'm not a big fan of honey generally, but quite like it in a biscuit.
