Bank Holiday Weekend Fun

It was another long weekend last week, with a Bank Holiday on Monday. We had a busy weekend which involved bbq's, football, gardening, the pub, diy, decorating and lots of time spent chilling with family and friends. Thanks to Morrisons and being a #MorrsionsMum I was able to get a lovely load of shopping in to give us an extra special weekend.

As of last week Morrisons have cut prices on 1000's of favourite products. These reductions aren't temporary, these are everyday low prices, so wherever you see the yellow 'I'm Cheaper' sign you'll know that the prices are lower and will be staying lower.

Unfortunately the Morrisons store nearest to us, which is convenient for me to go to when I go to the gym, is an old store which doesn't have the fancy fruit & veg stands that I have seen many people raving about. Despite this, the quality of the food was still good, although this smaller store seems to lack the larger choice of products that a bigger store would have, and after I got home I noticed a few products with shorter dates on that I would have liked. I usually avoid going here because it requires two £1 coins - one for the parking meter (refunded if you spend over £5) and one for the trolley, but as I had planned my visit I made sure I had the necessary coinage in my purse before I left home.

I bought a few more items that I would buy in my usual weekly shop, including lots and lots of fresh meat for weekend barbecues. We enjoyed Steak on both Friday and Saturday nights, and the quality of the cheaper rump steak was just as good as the more expensive rib eye.

Bank holiday Monday saw us enjoying a family bbq, despite the weather being a little dull. We had Pork shoulder, which is part of a 3 for £10 deal (6 steaks in each pack), along with Jacket Potatoes which were part of the Market Street 3 for £1.50 deal, which is an amazing deal as the bag contained 6 potatoes, making them less than 10p each!

I made some Guacamole and Coleslaw to accompany the pork and an Ice Cream cookie sandwich for dessert, using two packs of Triple Chocolate Cookie mix and Morrisons Chocolate Ice Cream Sundae ice cream. The total cost of the complete meal was a little over £10, making it around £1.75 per head (based on 6 people).


BBQ Balsamic Pork Shoulder
Jacket Potatoes
Coleslaw
Mixed Salad
Guacamole

Ice Cream Cookie Sandwich

Bank holiday bbq
Cookies & Ice cReam

BBQ Balsamic Pork Shoulder - serves 6

780g Morrisons British Pork Shoulder Steaks (6)
100ml Balsamic vinegar
3 garlic cloves, crushed
2 tsp dried herbs
1 tsp smoked paprika

  • Mix the balsamic, garlic, herbs and paprika together
  • Pour over the steaks, coating fully
  • Leave the steaks in the fridge to marinate for a few hours
  • Place onto a hot bbq for a few minutes each side until cooked through


Guacamole

1 ripe Avocado, mashed
1 vine ripened tomato, chopped
1/2 red onion, finely chopped
juice of half a lime
handful of fresh coriander, chopped

  • Mix all the ingredients together


Ice Cream Cookie Sandwich

2 packs of Morrisons Triple Chocolate Cookie Mix
50g butter, softened
approx 30ml water
950ml tub of Morrisons chocolate Ice Cream Sundae

  • Make up the 2 packs of cookie mix, as per directions on the pack, using the butter and water
  • Divide the cookie dough into 3 equal balls
  • Flatten the balls onto a greased baking sheet
  • Bake for 10 minutes in a preheated 180C oven
  • Leave to cool
  • Once cool place half a tub of ice cream onto one cookie
  • Place another cookie on top of the ice cream 
  • Place the remaining ice cream onto the second cookie & place the third cookie on top
