Bread Pudding

Winter is well and truly setting in which makes it the perfect time to eat stodge. I've never made bread pudding before (not to be confused with bread and butter pudding) but after looking at a few recipes it looked like something that could be rustled up quickly and easily.


I found a recipe on the BBC Good Food site and followed it with just a few changes. IT was a big hit with the family and I had to make another one very soon after. It's great for lunchboxes and will keep the kids tummies full all afternoon (hopefully it won't leave them needing a nap!).


Bread Pudding

Bread Pudding - serves an army

500g Wholemeal bread
600ml Milk
350g Mixed fruit (I used Whitworths juicy mixed fruit)
1 tbsp Steenbergs Mixed Spice
1 tbsp Cinnamon
2 eggs, beaten
140g light soft brown sugar
zest of 1 orange
100g butter, melted
2 tbsp granulated sugar


  • Tear the bread into pieces in a large bowl
  • Pour on the milk and scrunch the bread up
  • Add the mixed fruit, spices, eggs, and soft brown sugar , mix well and set aside for 15 minutes
  • Grease and line a 13"x9" baking tin & preheat the oven to 180C
  • Add the melted butter to the mixture & mix well
  • Pour into the prepared tin, sprinkle with the granulated sugar and bake for approx 1 hour or until firm
  • Cut into squares and serve warm or cold
