Cooking With Your Toddler - Jam Tarts

It's that time of the week again when I post a recipe that I have cooked with Jack and invite you all to add your own Toddler cooking experiences to the Linky at the bottom of the post. I'm really pleased that so many of you have joined in so far, keep all those posts coming so that we can all share our recipes. Already Mummy vs Work has baked our Chocolate Fudge cupcakes (including her own variation) and Mummy and the Beastie has made Seasider in the City's Crispie Cakes, although I did have to bend the rules slightly for her as she made them whilst little Beastie was sleeping, the lengths that a pregnant woman will go to to ensure she gets to lick the spoon!

This week we made Jam tarts as I had some sweet pastry left over from the Ginger & Lemon Treacle Tart that I'd made. As I wanted to use some more of the lemon curd up so I could use the empty jars for chutney I thought we could make half jam and half lemon curd. If you want the recipe for the pastry then just click here, or you can use shop bought. I didn't intentionally use wholemeal flour but for the first time ever I was all out of plain white flour.


Ingredients


Ready made shortcrust pastry
Jam
Lemon Curd




Roll the pastry out to approx 2-3mm thick.

Cut out circles with a cutter

Press into a shallow bun tin.

Spoon a small amount of jam or lemon curd into the centre of the pastry.

Bake in 180 degree oven for approx 15 minutes

Allow to cool on a wire rack before eating

Jam tarts are another food item that I can add to Jack's 'I not like it' list !
