My Daddy Cooks .......but not in this house!

Earlier this week I received my lovely shiny new copy of My Daddy Cooks. I've heard so much about it that I just had to get it, I am a sucker for cookery books, they make great bedtime reading.....especially when I'm on a diet, I just drool over the pictures.

My Daddy Cooks has been written by Nick Coffer who, due to the recession, lost his business and found himself being a stay at home Dad to his gorgeous toddler Archie. He started a blog to give himself something to focus on and a place to document what he and Archie were cooking. Now the blog is a full-time activity which has led to a whole new career for Nick.

Tuesday night the Husband was away so My Daddy Cooks came to bed with me instead. It was the perfect bed companion, no stealing all the covers, no snoring and definitely no farting, it just lay there quietly all night....snuggled on top of Prepped.



There are a lot of nice and easy family recipes inside, from Oven-Baked French Toast and Fruity Popovers to Pork and Fennel Casserole and Mexican Lasagne. I thought I would give the Stuffed Aubergines a try, as I had two of them sitting at the bottom of the fridge.

It's a very simple recipe combining the aubergine flesh with onion, tomatoes, herbs and spices, and scooping it back into the aubergines before baking in the oven. I didn't use as much olive oil as the recipe called for, due to being on a diet, and I didn't have basil or parsley so used coriander instead, and served the two halves with a salad and a spoonful of Greek yoghurt for my dinner - and it was very filling (but not fat-full!).  









Next time I make them I will follow the recipe more closely and might even share them with the rest of the family.


PhotobucketAnd then, as if that wasn't enough cooking for a while I made Mexican Lasagne which uses flour tortillas instead of lasagne sheets and creme fraiche instead of white sauce (but I used Greek Yoghurt). I've made a similar dish before with Staffordshire Oatcakes which if you don't know what they are they are like an oaty pancake which have a taste all of their very own and are delicious with either jam or melted cheese and ham on.




PhotobucketAnd just as I thought I could cook no more Julia (aWannabeFoodie) told me that I just had to try the Microwaved Chocolate Steamed Pudding too! This has got to be one of the easiest puddings I have made - less than 10 minutes to prepare and 9 minutes to cook and we ended up with a rich gooey chocolate pudding. Even though my MUMenTUM willpower has been good this week, it wasn't that good & I licked the serving spoon clean!




At the weekend I might even get the kids involved making some Popovers for breakfast.

    It was great, and everyone cleared their plates - except Jack but he never clears his plate!
