The End of Summer - #BackToSchoolMums

The summer is at an end, which means that my stint as a Lindeman's sunshine ambassador has sadly come to an end too. I've enjoyed our get togethers with friends at home and on holiday, spreading a little Australian sunshine to our little part of the world.

This weekend it was the turn of some of the school mums to be invited into The Crazy Kitchen to celebrate the return of the school year and sample some wine and nibbles. Due to being in the throws of decorating the kitchen I didn't have any time for baking so decided to serve a few simple to prepare nibbles.

Bruschetta

Wine Menu
Bin 35 Rosé
Bin 65 Chardonnay
Bin 85 Pinot Grigio

Nibbles Menu
Salsa & Sour Cream with flatbreads
Veggies with Caramelised onion Hummus
Caprese sticks
Bruschetta with avocado and roasted tomato
Bruschetta with Goats cheese and caramelised onion chutney
Sweet Chilli sausage bites
Olives
Selection of fresh fruit

Salsa
6 ripe tomatoes
1/2 red onion
1/2 small red chilli
handful of fresh coriander
squeeze of lemon juice
1 tsp sugar
salt & pepper 
  • chop the tomatoes and red onion and add to a bowl
  • finely chop the chilli and coriander and add to the bowl
  • stir in the lemon juice, sugar and salt & pepper to taste
  • mix well
Sour Cream and chives
1/2 pot sour cream
tbsp chopped fresh chives
  • stir the chives into the sour cream

Caramelised Onion Hummus
1 can chickpeas, drained
100ml olive oil
juice of 1/2 lemon
3 tbsp caramelised red onion chutney
1 clove garlic
  • add all the ingredients to a blender (or a Nutribullet)
  • blend until smooth
Caprese sticks
mozzarella pearls
baby plum tomatoes, halved
fresh basil leaves
extra virgin olive oil
black pepper
  • thread the mozzarella, tomatoes and basil leaves onto cocktail sticks
  • drizzle a little olive oil over and a few twists of black pepper

Bruschetta 
100ml olive oil
2 garlic cloves, peeled
2 small baguettes
  • add the oil to a small ovenproof dish with the garlic cloves
  • heat in a preheated 180C oven for 10 minutes
  • press the garlic with the back of a fork to flavour the oil
  • slice the baguettes into thin slices
  • lay the slices on a baking tray and brush with the oil
  • place in the oven for 5-10 minutes until lightly golden and crisp
  • set aside whilst the toppings are prepared


Avocado & Roasted tomato
baby plum tomatoes, sliced lengthways
olive oil
1 avocado, chopped
pinch of fresh oregano leaves
squeeze of lemon juice
salt & pepper
  • arrange the tomato halves in an ovenproof dish
  • drizzle with olive oil
  • roast in a preheated 180C oven for 10 minutes
  • mix with the avocado, oregano, lemon juice and salt and pepper to taste
  • spoon onto the toasted bread slices before serving

Goats Cheese & Caramelised onion chutney

  • spread a little goats cheese onto each toasted bread slice and top with some chutney

Sweet Chilli Sausage Bites
1 package of sweet chilli sausages
  • cut each sausage into 8 pieces
  • Bake in a hot oven until browned & crispy on the edges
  • serve with cocktail sticks
