Littl'uns for the Little Ones (or not so little)

Most nights I make our family dinner from scratch, sometimes a quick pasta meal, or sometimes something that has been in the slow cooker all day. There are days that I may have been baking and working all day and I wish that I had a freezer full of ready meals for when the hungry brood walk through the door, but as that's never going to happen I sometimes have the odd 'helping hand' such as Jack's favourite 'Monster Mash', a green mash of potato and broccoli - sounds revolting but it actually tastes quite nice!

We all love baked potatoes and I make them at least once a week and usually on the nights when everybody is in at the same time but frozen baked potatoes are such a time saver, especially when everyone is eating at different times due to sporting activities after school.

These Littl'uns from Bannisters' Farm are frozen mini baked potaoes that are perfect for younger children or for a light lunch. Jack enjoyed one with beans, cheese and sweetcorn for his dinner and I had one with sweetcorn & a low fat cheese triangle (& a little tabasco) for my lunch - at just 85 calories each potato they are a great for a low calorie meal.

The potatoes are drizzled with olive oil before being baked and then frozen. They take just 3 minutes in the microwave and are lovely and fluffy on the inside and have a cross marked on the top, just needing a little squeeze to open them up for filling.

  1. We've tried other brands of ready-made jackets before and always found them powdery or under-done, so I'm definitely going to check these ones out.
