McCain Winter Warmers

Jack was desperate for a Halloween Party this year, and he didn't really mind who was going to be there, he just wanted a party, and who am I to disappoint. He did have to be a little patient though, as due to trick or treating and the local fireworks display we didn't manage to have his party until 2 days after Halloween.

McCain kindly provided us with some Ready Baked Jackets along with some ingredients for some toppings, which we had with salad, crisps and freshly baked breadsticks & focaccia.

Whilst the jackets were microwaving I followed the simple recipes to make two simple and quick toppings:

Homemade Coleslaw topped McCain Ready Baked Jackets

Serves: 2
Preparation time: 15 minutes
Cooking time: Approx 7 minutes
Cost per serving: £1.86 per person*

Ingredients:
·       2 McCain Ready Baked Jackets
·       Handful grated white cabbage
·       Handful grated red cabbage
·       1 carrot, peeled and grated
·       ½ onion, peeled and grated
·       1 tsp sugar,optional.
·       3 tbsp low fat. Greek yogurt
·       1 tbsp half fat crème fraiche
·       ½ tsp English mustard
·       Good squeeze of lemon juice

Method:
1.     Cook the McCain Ready Baked Jackets according to the pack instructions
2.     Simply mix the yogurt and crème fraiche, season with mustard and salt and pepper
3.     Add a squeeze of lemon and sugar if using
4.     Just before serving stir in the grated vegetables and use to top the McCain Ready Baked Jackets

McCain Ready Baked Jackets with Pesto Chicken

Serves: 2
Preparation time: 10 minutes
Cooking time: Approx 7 minutes
Cost per serving: £2.55 per person*

Ingredients:
·       2 McCain Ready Baked Jackets
·       1 cooked chicken breast, chopped
·       Handful baby spinach leaves, torn to small pieces
·       3 or 4 tbsp fresh green pesto
·       75g your favourite cheese grated (we suggest cheddar)

Equipment:
·       1 (20cm) pie tin, greased with a little butter

Method:
1.     Preheat grill
2.     Cook the McCain Ready Baked Jackets according to the pack instructions
3.     Meanwhile mix the chopped chicken with the spinach and pesto
4.     Split open the McCain Ready Baked Jackets, pop on an oven tray and top with the chicken
5.     Sprinkle over the grated cheese and grill until hot and bubbly
6.     Serve with a side salad

Top tip:
·       Try sprinkling with toasted pine nuts for extra crunch.
·       For a veggie option simply leave out the chicken.
