Paprika Potatoes

This is a great alternative to mashed, boiled or roast potatoes. It's really tasty as well as being very easy to prepare.

Paprika Potatoes - serves 4/5

1 tbsp Olive Oil
1 Onion, sliced
750g Potatoes
1 tsp Paprika
1 tsp Turmeric
200ml Vegetable stock


  • Heat the oil in an ovenproof lidded pan
  • Add the onion & fry gently for 5 minutes
  • Dice the potatoes (approx 1-2cm) and add to the pan
  • Stir in the paprika, turmeric & stock and mix well
  • Place in a preheated 200 C oven with the lid on for 30 minutes, stirring halfway through
  • Add salt & pepper to taste before serving as an accompaniment to your meal
